Frascarelli

A recipe from the past that never goes out of style in traditional cuisine, Frascarelli are a typical specialty of Lazio, where almost every village has its own traditional recipe. Today we’re talking about Frascarelli from Rocca Priora.

Ingredients

  • 400 g rice
  • 300 g durum wheat flour
  • salt
  • about 2 liters broth, or water
  • ragù sauce, or tomato sauce, or sausage sauce
  • grated Parmesan cheese

Preparation

Boil 2 liters of water with salt (as our grandmothers used to do) or 2 liters of broth in a pot. When it boils, add the rice and stir for about 10 minutes, then, with the help of a whisk, add the flour and continue stirring until cooked. If the mixture becomes too dry, add more broth or hot water, as the dough should resemble soft polenta. When cooked, pour onto a wooden cutting board, let it set for a few seconds, then season with tomato sauce with sausage and eggplant, or meat sauce. Sprinkle generously with Parmesan cheese and you’re done!
