“U Pizzillu coll’erbe”

“Ù pizzillu coll’erbe” is a typical dish from the Turano Valley (RIETI) consisting of a flatbread made with wheat flour, salt, oil, and baking soda.
Cooked on the grill and accompanied by wild chicory, as tradition dictates, it is served with sausages.

The ingredients are:

  • 1kg of 00 flour
  • 1 teaspoon of baking soda
  • 1 tablespoon of olive oil
  • 1 level tablespoon of salt
  • Water as needed.

(This is one of the many versions we have been told about).

Make a well in the flour, place all the other ingredients in the center, and begin to add water at room temperature until you obtain a consistency similar to pizza dough. Once the dough is made, prepare small balls of dough, flatten them like mini pizzas, and cook them on the grill. When they are cooked, cut them in half and fill them as desired.
